A Little Margarita in Your Meat

This was a wonderful summer meal, with the perfect summer marinade.  So perfect that I wanted to drink the marinade, because it smelled like margaritas.  Don’t worry I refrained, put my patience into gear and waited to devour the meal.

3 Limes
1/4 Cup Canola Oil
3 Tablespoons Tequila (throw in another shot for yourself :) )
1 Teaspoon Sugar
Salt
1 1/2 Lb Skirt Steak – cut into 8 inch lengths
1/2 Cup Unsalted Butter at Room Temp
2 Teaspoons Ancho Chili Powder
1 Avocado

Finely great the zest from the limes at set aside to use with the butter.

Squeeze the juice from all 3 limes ( 3 Tbsp) into a shallow dish that is large enough to hold the meat laid flat.
Stir together the lime juice, oil, tequila, sugar and 1/2 teaspoon of salt.
Put the meat in the dish and turn to coat it.
Cover the meat in the dish and let it marinate at room temp for 15 minutes.

Heat the grill while the meat is in the marinade and then get ready to prepare the ancho-lime butter.

Mix together the room temp butter, lime zest and chili poweder. Set aside. (You can put it back in the fridge while you wait or freeze it up to a month to use later)

After grilling the meat to your desired liking, add a dollop of ancho lime butter on top. Slice the avocado on top of the meat as well.
 We served it on a bed of brown rice with a side of steamed spinach and garlic which accompanied the meal nicely!
